

Indian style chickpea salad

Ingredients
1 ½ tsp. (7 mL) canola oil
1 tbsp. (15 mL) lemon or lime juice
1 ½ tsp. (7 mL ) honey
3/4 tsp. (3 mL ) curry powder or paste
1 can 3.5 oz. (106 mL) Bonduelle Chickpea Mini Cans
3/4 cup (180 mL) cauliflower florets
1/2 cup (125 mL) cherry or grape tomatoes, cut in half
1 tablespoon (15 mL) chopped red onions
1 tbsp. (15 mL) raisins
1 tablespoon (15 mL) natural almonds, coarsely chopped
1 cup (250 mL) baby spinach
Salt and freshly ground pepper
Preparation
In a bowl, combine oil, lemon juice, honey and curry powder.
Add remaining ingredients, stir and season to taste.
