

Strawberry, melon and feta quinoa salad

Ingredients
1 can 3.5 oz (106 ml) Bonduelle QUINOA
1/2 c (125 ml) strawberries, quartered
1/3 c (80 ml) cantaloupe, chopped
1/4 c (60 ml) green grapes, halved
1/2 c (125 ml) pea shoots cut into 1" (2.5 cm) pieces or baby spinach
3 tbsp (45 ml) cubed feta
1 tsp (5 ml) olive oil
2 tsp (10 ml) lemon juice
Salt and freshly ground pepper
Preparation
Pour quinoa into a bowl.
Add remaining ingredients, mix, season to taste and enjoy.
