

Kidney bean pesto salad with fruit

Ingredients
1 can 3.5 oz (106 ml) Bonduelle RED KIDNEY BEANS
½ apple, chopped
1 stalks celery, chopped
1/3 c (80 ml) halved red or green grapes
1/3 c (80 ml) carrot, chopped
1/3 c (80 ml) yellow pepper, chopped
1 green onion, chopped
1 tbsp (15 ml) homemade or store-bought pesto
2 tsp (10 ml) cider vinegar
1 tbsp (15 ml) pumpkin seeds
Salt and freshly ground pepper
Preparation
In a bowl, mix all ingredients, season to taste and enjoy.
